Street food XIII - walking through the streets of old dhaka you come across the popular Banglaedeshi snack - the bakarkhani which is a type of layered bread. It is thought that the Bangladeshi bakarkhani may have its roots in Kashmir and arrived via the northern regions. Although the bread is similar to a paratha, the name Bakarkhani appears only in Kashmir and Bangladesh. The bread is made by stretching a sheet of dough repeatedly and interleaving with ghee before baking on a tandoor or tawa.
