Breakfast time in Yinchuan old town - a sort of hot-pot with vegetables and scraps of meat, and bones of course for the broth. When the are ordered, hot oil is added, the pots are lifted out of the fire with the huge tongs and a dumpling which is bubbling away in the pot next to them is added as relish.
