Jaggery can be made from both sugarcane and the date palm tree. The sugar made from the sap of the date palm is more prized. A syrup is formed by boiling raw sugarcane juice or palm sap in vessels which then solidifies to form a block or paste. Date palm jaggery is only available during the winter in West Bengal, India and Bangladesh.
